  • 1 clove garlic, minced (optional)
  • Salt and black pepper to taste

Instructions:

  • Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.
  • In a large skillet, cook the diced pancetta or bacon over medium heat until crispy and golden brown. If using garlic, add it to the skillet and cook for another minute until fragrant.
  • In a mixing bowl, whisk together the eggs and grated cheese until well combined. Season with black pepper.
