Preparation time: 10 minutes

Cooking time: 15 minutes

Serving size: Serves 4

Ingredients:

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice (about 1-2 lemons)
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Red pepper flakes, to taste (optional)
  • 8 oz (225 g) linguine or spaghetti, cooked al dente (optional)
  • Lemon wedges, for garnish

Instructions:

  1. Prepare the Ingredients:
    • If serving over pasta, cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside.
    • Peel and devein the shrimp if not already done.

  2. Cook the Shrimp:
    • In a large skillet, melt 2 tablespoons of butter with the olive oil over medium-high heat.
    • Add the shrimp in a single layer and season with salt, pepper, and red pepper flakes if using.
    • Cook the shrimp for about 2 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

  3. Prepare the Sauce:
    • In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté the garlic for about 1 minute until fragrant, being careful not to burn it.
    • Add the white wine and lemon juice to the skillet. Bring the mixture to a simmer and cook for about 2-3 minutes, allowing the sauce to reduce slightly.

  4. Combine and Serve:
    • Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for an additional 1-2 minutes to warm the shrimp through.
    • If serving over pasta, add the cooked linguine or spaghetti to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
    • Sprinkle with fresh parsley and serve immediately with lemon wedges on the side.
