Ingredients:

  • 8 ounces fettuccine pasta
  • 2 boneless, skinless chicken breasts, thinly sliced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon nutmeg (optional)

Instructions:

  • Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  • Season the thinly sliced chicken breasts with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts to the skillet and cook until golden brown on both sides and cooked through, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  • In the same skillet, add minced garlic and cook for 1-2 minutes, or until fragrant.
  • Reduce the heat to medium-low and add the heavy cream to the skillet. Stir in the grated Parmesan cheese, butter, and nutmeg (if using), until the sauce is smooth and creamy.
  • Return the cooked chicken breasts to the skillet and simmer in the Alfredo sauce for 2-3 minutes, or until heated through.
  • Add the cooked fettuccine pasta to the skillet with the Alfredo sauce and toss until well coated, adding reserved pasta water as needed to loosen the sauce and achieve your desired consistency.
