Ingredients:

  • 4 ounces (115g) bittersweet chocolate, chopped
  • 1/2 cup (115g) unsalted butter
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup (30g) all-purpose flour
  • Pinch of salt
  • Confectioners’ sugar, for dusting (optional)
  • Fresh berries or ice cream, for serving (optional)


Instructions:

  • Preheat the oven to 425°F (220°C). Grease four ramekins or custard cups with butter and dust with cocoa powder.
  • In a heatproof bowl set over a pot of simmering water, melt the chopped chocolate and butter together, stirring until smooth. Remove from heat and let cool slightly.
  • In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until pale and thickened.
  • Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly until well combined.
  • Sift the flour and salt over the chocolate mixture and gently fold until just incorporated.
  • Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.
  • Place the ramekins on a baking sheet and transfer to the preheated oven. Bake for 10 to 12 minutes, or until the edges are set but the centers are still soft.
  • Remove the lava cakes from the oven and let them cool in the ramekins for 1 to 2 minutes.
  • Carefully run a knife around the edges of each cake to loosen it from the ramekin. Invert the cakes onto serving plates and gently lift off the ramekins.
  • Dust with confectioners’ sugar, if desired, and serve immediately with fresh berries or a scoop of ice cream.
