Preparation time: 15 minutes
Cooking time: 12 minutes
Serving size: 4 servings
Ingredients:
- 4 ounces (115g) bittersweet chocolate, chopped
- 1/2 cup (115g) unsalted butter
- 2 large eggs
- 2 large egg yolks
- 1/4 cup (50g) granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup (30g) all-purpose flour
- Pinch of salt
- Confectioners’ sugar, for dusting (optional)
- Fresh berries or ice cream, for serving (optional)
Instructions:
- Preheat the oven to 425°F (220°C). Grease four ramekins or custard cups with butter and dust with cocoa powder.
- In a heatproof bowl set over a pot of simmering water, melt the chopped chocolate and butter together, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until pale and thickened.
- Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly until well combined.
- Sift the flour and salt over the chocolate mixture and gently fold until just incorporated.
- Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.
- Place the ramekins on a baking sheet and transfer to the preheated oven. Bake for 10 to 12 minutes, or until the edges are set but the centers are still soft.
- Remove the lava cakes from the oven and let them cool in the ramekins for 1 to 2 minutes.
- Carefully run a knife around the edges of each cake to loosen it from the ramekin. Invert the cakes onto serving plates and gently lift off the ramekins.
- Dust with confectioners’ sugar, if desired, and serve immediately with fresh berries or a scoop of ice cream.
