Ingredients:

  • 1 cup (240ml) strong brewed coffee, cooled to room temperature
  • 3 tablespoons coffee liqueur (optional)
  • 3 large eggs, separated
  • 3/4 cup (150g) granulated sugar, divided
  • 1 cup (240ml) heavy cream
  • 8 ounces (227g) mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 24-30 ladyfinger cookies
  • Unsweetened cocoa powder, for dusting


Instructions:

  • In a shallow dish, combine the cooled coffee and coffee liqueur, if using. Set aside.
  • In a large mixing bowl, beat the egg yolks with 1/2 cup of sugar until thick and pale yellow.
  • Add the mascarpone cheese and vanilla extract to the egg yolk mixture. Beat until smooth and creamy.
  • In a separate bowl, beat the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the mascarpone mixture until well combined.
  • In another bowl, beat the egg whites with the remaining 1/4 cup of sugar until stiff peaks form.
  • Gently fold the beaten egg whites into the mascarpone mixture until no streaks remain.
  • Quickly dip each ladyfinger cookie into the coffee mixture, making sure not to soak them for too long.
  • Arrange a layer of dipped ladyfingers in the bottom of a serving dish or individual glasses.
  • Spread half of the mascarpone mixture over the layer of ladyfingers.
  • Repeat the layers with the remaining ladyfingers and mascarpone mixture.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
  • Before serving, dust the top of the tiramisu with unsweetened cocoa powder.
  • Serve chilled and enjoy!
