Ingredients:

  • 1 whole chicken (about 3-4 pounds)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • Fresh herbs (such as rosemary, thyme, and sage)
  • Salt and black pepper to taste


Instructions:

  • Preheat your oven to 425°F (220°C).
  • Rinse the chicken inside and out under cold running water and pat dry with paper towels.
  • In a small bowl, mix together the olive oil, minced garlic, salt, and black pepper.
  • Rub the seasoned olive oil mixture all over the chicken, including under the skin and inside the cavity.
  • Stuff the cavity of the chicken with the lemon slices and fresh herbs.
  • Truss the chicken by tying the legs together with kitchen twine and tucking the wingtips under the body.
  • Place the chicken breast-side up in a roasting pan or on a baking sheet lined with parchment paper.
  • Roast the chicken in the preheated oven for about 1 to 1 1/2 hours, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  • Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  • Serve the Roast Chicken hot with your favorite side dishes.
