Ingredients:

  • 8 ounces (about 225 grams) of noodles (such as spaghetti, rice noodles, or egg noodles)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned or thinly sliced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 cup protein of your choice (sliced chicken breast, tofu, shrimp, or beef)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar
  • Optional garnishes: chopped green onions, sesame seeds, sliced chili peppers


Instructions:

  • Cook the noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  • In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, rice vinegar, and brown sugar to make the sauce. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the protein (chicken, tofu, shrimp, or beef) and stir-fry until cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sliced onion, and stir-fry for 1-2 minutes until fragrant.
  • Add the bell pepper, carrot, broccoli, and mushrooms to the skillet. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  • Return the cooked protein to the skillet and add the cooked noodles.
  • Pour the prepared sauce over the noodles and vegetables. Toss everything together until well coated in the sauce and heated through.
  • Remove from heat and garnish with chopped green onions, sesame seeds, and sliced chili peppers if desired.
  • Serve the stir-fried noodles hot and enjoy! Adjust seasoning with additional soy sauce or other sauces according to taste.
